Dr. Marquart is an Associate Professor in the Department of Food Science and Nutrition at the University of Minnesota. His current area of reasearch includes whole grains and health; individual, environmental and behavioral factors influencing barriers, motivators and consumption of whole grain foods. Dr. Marquart's group is examining the supply chain related to the gradual incorporation of whole grain foods into children's diets through school foodservice.

Dr. Arndt is a director of R&D for Conagra Brands, focusing on areas including whole-grain nutrition and product applications, functional foods, and value-added ingredients. She received her PhD degree in grain science and industry from Kansas State University.
